John, aka the “Boss of Barbecue,” has been perfecting his own technique ever since starting his catering business six years ago. Sparked by a childhood of weekly cooking sessions with his Mom, John’s passion for food found an outlet in bringing quality Southern barbecue to the Bay Area. He’s spent countless hours experimenting with fire, meats, sauces, and recipes to ensure his barbecue meets the high standards of the Texas Hill Country from which he hails.
His perseverance paid off. Within a month of getting a food truck and taking their catering business on the road, Hill Country BBQ won the People’s Choice Award at the Redwood City Blues & Barbecue Competition. We think it’s their loving attention to detail that’s to blame. “To us quality means everything,” John states. “We take great pride in what we make and serve.”
Hill Country BBQ sources their natural and organic briskets, pork shoulders, ribs and chicken from Golden Gate Meats in San Francisco. His beef brisket is cooked over an oak and applewood fire for 18 hours and served up on a gourmet brioche bun with house-made barbecue sauce. Sides made fresh daily with locally-sourced ingredients provide the perfect accompaniment.
